- 1 cup almond milk
- 1/2 cup rolled oats
- 1 cup blueberries, fresh or frozen
- 2 medium-sized ripe bananas
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 3/4 teaspoon vanilla extract
- 1 tablespoon maple syrup, optional
Pour the oats in a blender or the bowl of a food processor and pour the milk over the top. Let soak for 5 minutes. Add the remaining ingredients and process until well combined. Serve immediately. Yields 2 small smoothies.
